Thanksgiving Season

A couple hours after the Thanksgiving dinner at our house, we drove to Winona to be with P's parents. I could have done a lot of shopping on Friday but I chose to be with P's parents. I love talking and listening to them. I enjoy listening to my DIL's very interesting stories. It helps me know my husband's family more. P was busy shopping for computers. He bought a notebook for his parents. He was busy setting the thing up the whole day. Isabelle had great time playing and running around the house unsupervised by her mommy. She and I also went for a walk with my SIL and her two daughters later in the afternoon. The rest of P's family got to my PIL's place late afternoon that day. P's uncles also arrived- one from Porland, Oregon and the other from Rochester. We all went to Timbers for dinner. I had Fillet Mignon!

On Saturday, we had another Thanksgiving Dinner with P's immediate family. My MIL makes great food. I love this particular dinner she prepares each year. She makes really perfect Turkey.

We drove home from Winona right after supper on Saturday. It was a quiet drive being that we didn't have to listen to Isabelle's funny songs because she was sleeping the whole time we were driving! We had to be home that night because there would be another party at our house with P's uncle (Father's side) and his son's family right after church. It's a big plus that our church is just across the street of us. So, P's uncle and his cousin with his family came. They brought this most delicious roast beef I've ever had in my entire life! The beef was organic and I'm sure its great taste didn't just come from its being organic. He later told me that he used Lipton Onion Soup Mix to create that magic taste. They ended up staying until dinner. P's cousin made the best New York strip steak for Paul and his brother. I ended up eating half of P's steak. It was tastier and more tender than the Fillet Mignon I had in Winona. Watching him make the steak, I've learned a strategy to make the steak tender. I won't tell you though!

I am pretty sure I put on extra weight over the weekend. I don't mind though. The last thing I would do was think about my figure on Thanksgiving season. Is it not supposed to be a season of food at least in America? One thing I notice though, is that people here aren't really showing gratefulness more on this season. I want to see how they show their thankfulness to God for all the blessings we received from Him. I don't see thankfulness in eating great meals. That is why on Thanksgiving Day, our small way of thanking God was to make ourselves a family for those whose families are thousands miles away.

Thanksgiving Dinner

On Thanksgiving Day, we stayed home to give ourselves and our international friends a nice Thanksgiving dinner. Six of our friends from two countries came and joined us eat the turkey. There's a great joy in having them because we knew it meant so much for them being away from their own families. It is wonderful that we could be their family away from home.

Our turkey has a little funny story attached to it. See, we developed a habit of buying a turkey at the last minute. We liked to go to Byerly's in the morning of Thanksgiving Day and buy a turkey dinner for half price. We were pretty sure we would do the same thing this year. So early morning on Thursday, we went to Byerly's and guess what? It was CLOSED! We knew that if a 24/7 grocery store was closed that day, then the rest of the food shops were also closed! We were so bummed! We decided not to give up looking for a turkey though. I was even willing to buy a fresh one and cooked it myself. While driving around, we almost give up the thought of having turkey for our dinner when we saw a lot of cars parked in front of Boston Market. We knew right there that there could be a turkey meal there. We parked and, lo and behold... the sign on their entrance said that they were selling whole turkey dinners! It saved our day! We got home and prepared for the grand meal.

This is another thing that made our T dinner not very traditional. Pluma Moos is for Easter but I love my husband so much that I would go against tradition to give him what he wants. Surprisingly, all of our guest loved it!

Jose's Homemade Salsa


I'm posting this recipe for Janet and for those who love chips and salsa. I've loved it since that evening I tried it. It's guaranteed deliciouso! A friend's friend, named Jose, made this on a party we got invited to last month. Here it is...

2 Tbsp. Mexican Peppers
4 Oz. of boiling water
1 16 oz. can of chunk tomatoes
6 fresh roma tomatoes
1 cup of chopped cilantro
1/2 cup of chopped green onions
1 lime squeezed for juice
1 tablespoon of chopped garlic

Blend water and peppers until chunks are gone. Mix in other ingredients more or less to taste.


My Favorite Story Since 5th Grade

A Man and his son were once going with their Donkey to market. As they were walking along by its side a countryman passed them and said: "You fools, what is a Donkey for but to ride upon?"

So the Man put the Boy on the Donkey and they went on their way. But soon they passed a group of men, one of whom said: "See that lazy youngster, he lets his father walk while he rides."

So the Man ordered his Boy to get off, and got on himself. But they hadn't gone far when they passed two women, one of whom said to the other: "Shame on that lazy lout to let his poor little son trudge along."

Well, the Man didn't know what to do, but at last he took his Boy up before him on the Donkey. By this time they had come to the town, and the passers-by began to jeer and point at them. The Man stopped and asked what they were scoffing at. The men said: "Aren't you ashamed of yourself for overloading that poor donkey of yoursu and your hulking son?"

The Man and Boy got off and tried to think what to do. They thought and they thought, till at last they cut down a pole, tied the donkey's feet to it, and raised the pole and the donkey to their shoulders. They went along amid the laughter of all who met them till they came to Market Bridge, when the Donkey, getting one of his feet loose, kicked out and caused the Boy to drop his end of the pole. In the struggle the Donkey fell over the bridge, and his fore-feet being tied together he was drowned.

Her Big Girl Bed

We were scouting for Isabelle's big girl bed for a few months. I already had a clear picture of what I wanted for her. I wanted a Twin Canopy Princess bed set for her. I was also telling her that we were gonna buy her a princess bed and she was very excited about it. She is into princess thing a lot... princess purse, princess outfits, princess lawn chair, princess videos, princess sippy cups and so on and so forth. So when she heard me say that we were buying her a big girl's princess bed, she was so excited that she even promised she would sleep in that bed and not move to mommy and daddy's bed at midnight (well, I kind of made her promised that.) But she is always welcome to sleep with us in our bed anytime she wants. So anyway, we found the exact bed I had in mind but we thought it was too spendy. So we kept looking for something similar but cheaper. We got to a small furniture shop and found a very simply twin bed with an underbed storage unit. We thought it was practical. We bought it. My dream to give Izzy a princess canopy bed was shattered! I was sad on the way home. Isabelle had no clue. When it was about time for P to pick up the bed, I asked him if he could cancel the said purchase and he did without a question because he knew why. What a relief! Last Friday, Hom Furniture had a huge sale. Their Princess Bouquet twin canopy bed was a hundred dollar off. So we went to the store and bought it at around 11pm on Friday night. P picked the set yesterday and put it together. When Isabelle saw it, she was very excited and slept in it through the night. She kept her promise on Night 1. I had a smile on my face even while sleeping... that smile said, "I never settle for less and that is also why I married P 3 years ago!"

Comedy Show



One thing that P and I have in common is that we both love to laugh. For our Friday night out, we went to ComedySportz in Minneapolis and had a really good clean laugh. The show was improvisational, that made it funnier. I think the actors are very witty. It's amazing how they could make just about anything hilarious. The audience gives them a situation and they make a comedy out of it. Here is a sample of the show...

Izzy's Super Thoughful Uncle

Paul's friend, Tom T., came and stayed at our house for 7 days. He helped Paul paint. He made Izzy feel so loved (and spoiled). Helped me put on extra weight for grilling big pieces of venison steak! I ate a whole lot of it! He made us happy. It was fun to see him and Paul enjoy playing the Nintendo Wii. He is super thoughtful! He arranged the flowers that Paul brought home for me on our anniversary the other day in the vase. And I couldn't believe he would even do Isabelle's laundry and fold her clothes! Thanks Tom!

3 Beautiful Years!

Three years ago the other day, Paul and I got married. Three long beautiful years! Lots had happened within three years. We got pregnant a month after the wedding. Had a one-month baby on our first year anniversary. Went to the Philippines to visit our family when Isabelle was only three months. Travel a lot around the USA (I have already been to more than 20 states). I was granted my US Permanent Residence. Moved to a new small church across the street of us (a big and wonderful change after we went to one suburban mega church in Eden Prairie). Paul started his food drive with our new church. I started to get involved in a ministry at our new church. Made a lot of new friends. Our names written in our friends' will and testament to take their kids if something happen to them and they both go to be with the Lord. The boy we are helping is going to graduate from college Summa Cum Laude next month. Paul had his first sermon delivered in a church in the Philippines. Preaching/teaching ministries for both of us in the Philippines. We started studying the School of Biblical Evangelism online (still far from being done). We had LQ (lovers quarrel) maybe 5 times in three years! He was very faithful to bring me flowers from time to time on ordinary days. I woke up earlier than I wanted to just so I could make food for him to bring to work for lunch almost every morning on weekdays. He was a perfect daddy to Izzy- he would wake up in the middle of the night when Izzy as a little baby needed a diaper change or just wanted to be held. He helped Izzy get prepared for bed almost every night. So on and so forth...

We are definitely more in love with each other now. We understand each other well. Most of the time, we don't even think that we were raised in different cultures. And my being away from my family was not really a big of an issue because I talk to them on the phone, yahoo messenger and text messenging almost everyday. I really didn't feel like they were so far away. I still don't. I am so far from my family in the Philippines and my only sister in Thailand but yet we feel so close to each other. I don't really miss them that badly. Thanks to all these available communication gadgets! Really the only issue in our three-year marriage is his own unique opionion that dried fish smells and tastes like hell and that "pluma moos" is food made in heaven! I agree that pluma moos tastes like heaven but I vehemently opposed to his bad idea of my dear dried fish. I can't imagine life without dried fish. And I don't know how people survive without it. LOL!

We are forever indebted to Peter and Gwen Bollant for introducing us. This marriage was registered in heaven because of the beautiful Peter and Gwen who care about us so much they think our lives would be great together. We can't thank them enough!

It is because there has been a rush to produce more and more crops to meet the growing food demand. Farmers have resort to using a lethal cocktail of pesticides to control disease and insect attack. Because of this, the quality of food has definitely gone down.

A good friend of mine had said that she has been converting the diet of her family into completely organic for a few years now. They have seen a really big difference in their health. I have also started considering to do the same thing. But hasn't really been serious about it until this past few days when I started doing some investigations on Organic Natural Living. This is what I've learned so far...

1. Organic food is much more rich in vitamins, minerals and fibre and retains the levels of nutrients for much longer.
2. Your body will be more resistant to disease as it will have higher levels of the essential nutrients it needs to fight off infection.
3. You will have more energy through consuming lower levels of toxins and chemicals that slow your body down.
4. If you are eating dairy or farm produce then you are also eating the chemicals, drugs and growth hormones given to the animals. Organic dairy and farm produce do not have them.
5. Organic farms respect our water resources and do not leach nitrogens and other pollutants from their soil.
6. Organic food just tastes so much better!
7. The average non organic fruit contains more than 20 pesticides.

Organic produce is more expensive than non-organic. That's the only concern, really, that people have about it. But if we really think of it, we would rather want to spend more money on food than spending it at the hospital. I'm not saying that if we go organic that we won't be sick anymore, even though it is possible, but knowing that we are giving ourselves the best care available coupled with trusting God to give us good health is really liberating. The next thing I need to do is scout for cheaper organic food shops.

Homeschooling

Paul and I have been seriously considering homeschooling our daughter. We just thought that this is the best option for us knowing how public schools in the US have become liberal over the years on issues on morality and God. Private Christian schools have become very expensive. We want the best for our daughter (and for her future brothers or sisters). I am so glad that America has offered this option to parents. FYI, the right of parents to homeschool their children is derived from both the Free Speech and Free Exercise Clauses of the First Amendment. It is wonderful that as parents, we have a constitutional right to direct the education of our child. Here is my list of reasons why we think homeschooling is the best option for us.

1. We can include the "Bible" as one of the main subjects in the curriculum.
2. Quality time. She will be with mommy and daddy more instead of spending a lot of time with classmates and homework.
3. We, her parents, are her teachers. That way, we know exactly what she is learning.
4. She will be protected from wicked ideologies.
5. She will be protected from bullies on her first few years at school, before she is able to protect herself.
6. She will be more focus on education and not on extra-curricular activities and socialization.
7. Minimized peer pressure.
8. It's much cheaper.
9. She will have time for extra-curricular activities like dance, sports and crafts without cutting a big amount of family time.
10. When we travel, she doesn't need to miss classes because we can have school wherever we are.
11. We will actually be helping the government save some money. I know that people have been complaining that the present administration is overspending. Here's the thing, homeschooling saving the government some money. If you wonder how, let me know and I will explain it to you later.

Yummy Sunday



Chips and Homemade Salsa at our friends' house. The salsa was super yummy! They used wild roasted chili instead of a regular crushed chili. It made a great difference! And definitely the healthy way to eat chips.

Just wanted to let you all know that yesterday (Sunday) at 8:30 am, my blog visitors count reached to 1000 since the day I installed that counter. It was kind of fun to see that. I haven't really worked on increasing my blog's traffic yet but I'm glad that the people I know exchanged links with me. Janet has been really helpful in teaching me how to increase traffic and I'm planning on working on it soon. I notice that my political opinion entries in this blog have attracted a lot of readers. I didn't really intend to open this blog to the entire public but I guess it's fine. I created this blog for my family back in the Philippines and my friends around the world but it looks like it is okay for other visitors to come and read my blogs too. Well, I think that's all I wanted to say.

Cold

The temps have been in the lower 30's this week, so Isabelle and I have started wearing our winter coats when we go out for our walk or to play in our yard. It's nice though. The air is fresh and smells clean. The leaves are not completely gone yet but the trees look dead already, except for the ever green ones. It snowed three times so far but it's still too warm that the snow melted as they touched the ground. I can't wait for the trees and the ground to turn white as the snow covers them. And I'm looking forward to sledding soon. Paul can't wait to do more skiing this winter because he is not planning to play Broomball again this year. As for me, I might join the Volleyball team from our church. And will definitely be busy working out and improving my swimming skill (if I have one) at the fitness center we are a member of. As for our little Izzy, since she is too young for gymnastics, she will keep herself busy playing with other kids at the fitness center and at church and at home with mommy. My friend and I are also planning to go to the Library with our toddlers once a week. So we going to have a really fun winter this year.

Pillow

Several months ago, I decided I switch pillows with my husband. I didn't ask for his opinion. It's my bad, I know. Lol! Actually, I just wanted to see if his pillow could help me wake up in the morning without back pains. My husband, who is super nice, didn't really complain because maybe he was tired of my complains every morning, even after we bought this awfully expensive bed called Sleep Number. I was hoping I would find my perfect number in our bed but it seems like forever to find it. The bed didn't help my back issues. So anyway, that morning after using my husband's pillow I could feel the difference. I didn't wake up with back pains. So I decided I would keep using it. I have been waking up with a perfect back since that day. I thought of buying the same pillow for him on our 3rd anniversary next week. But I was at the mall today with a friend and I saw the store where I could buy it from. So I just went ahead and bought it. I am going to surprise him with a new pillow tonight. I spent quite a bit on it but I know it's worth it. I have proven it.

"Seasoned"

After the ladies Bible study at church yesterday, I had the "seasoned" ladies come over for lunch at our place. Seven of them came, including our teacher who is the pastor's wife. I made the famous Minnesota Chicken Wild Rice Soup, Poppy Seed Lettuce-Strawberry Salad, Olive Rosemary Breadsticks and my favorite Oatmeal Raisins Vanishing Cookies. I am glad I got to do this to these honorable women. They have all been my great source of encouragement. I tried to make the little luncheon very special for them. I had my Royal Albert Old Country Rose Bone China set out. I got to use the very pretty Turin set for the soup for the first time. We got the said china set from the inheritance that Paul received from her grandmother who passed away last year. We wanted to buy the set to remember how beautiful grandma Dick was. We also get to talk about her Christ-like life when our guests notice the pretty china.

Paul bought these roses for me the other night. It was nice to have this arrangement as the center piece when the ladies were over for lunch yesterday. They asked me if the roses were for a special occasion, I told them that my husband is a sweet guy, he likes to bring me flowers from time to time when he comes home from work. And they said, "ohhhh!"

Trick-or-Treat

"Trick or Treat" is the greeting the children in costumes say when they knock on doors to ask for treats- usually candies, on Halloween. They are supposed to play tricks on those who refuse to give them treats. We didn't allow our daughter to participate in it on the night of October 31. Paul and I made our stance against Halloween. We have decided not to celebrate it.

Roughly two weeks before Halloween this year, we were invited by friends from church to a Halloween party at their house. We never expected them to hold a Halloween party and so we asked them questions what they do at the party. They told us it isn't really a Halloween party but a party on Halloween. They seemed to be offended that we questioned their party. We explained to them that we wanted to make sure what kind of a party it would be being that we don't celebrate Halloween. They assured us that it would be nothing Halloweeny. But when we got to their house, it was a Halloween party in absence of ghoulish costumes. They were handing out candies to trick-or-treaters saying, "Happy Halloween!" The kids were dressed up in their own favorite fiction charaters and also went out trick-or-treating. They came home carrying their own pillow cases that were full of candies. My two-year-old daughter thought it's a night to feast on candies!

Here are the major reasons why we don't celebrate Halloween...

1. Its pagan and evil roots!
2. Trick-or-Treating sends a message that to be greedy (asking for more candies until their sacks overflow with them) is okay. And that it's okay for kids to act like spoiled brats that when they are not given what they want they could threaten us by playing tricks. Oh, man!
3. Candies are not good for our daughter's health. Sugar is cancer's food!
4. We don't need to have fun when the world is having fun.
5. We can't stand sugar-coating a pagan holiday by dressing up as angels.

I want my daughter to learn that to be obedient to Christ sometimes means being different from our neighbors and the world—and that's a good lesson to learn.

Weekend Blurb

It was quite a weekend. We were supposed to be at 6 events/parties in two days. But that would not be possible. So we trashed 4 invites. It was time to prioritize family and meet new people. On Saturday, we drove (I was driving, actually) to Goodhue, an hour away from our place to be at a baby shower for one of the Filipino-American ladies I got to meet recently. It was super fun. I felt like I've been part of their group for a long time. I was so busy meeting and talking to them that I forgot to take pictures. My husband and daughter also felt so "in" with the group. Yesterday (Sunday), we were at the water baptism of my husband's sister-in-law and two of her children. We thought we missed the Pastor Appreciation Day at our church but we got to squeeze in a chance to meet and thank him personally right after our brunch with my husband's side of the family. The rest of the day was spent on watching football, playing boogle and watching more TV with the whole family.

Congratulations, President Obama!

I knew he would win! The night before the Election Day I had a dream that Obama was declared the new president of America. Somehow, I was already emotionally prepared for that. My husband and I were disappointed but life must go on! It's not the end of the world (maybe!) God is still seated on His throne and He is still sovereign! So we decided to leave the issues on the campaign period behind and to move on and do the right thing. The right thing I am talking about is to honor the people that God placed as our leaders. To support them. And the best thing to show our support is to pray for them so they govern in righteousness.

"I exhort therefore, that, first of all, supplications, prayers, intercessions, and giving of thanks, be made for all men; For kings, and for all that are in authority; that we may lead a quiet and peaceable life in all godliness and honesty. For this is good and acceptable in the sight of God our Saviour; Who will have all men to be saved, and to come unto the knowledge of the truth." 1 Timothy 2:1-4 KJV

Global Warming?

It's been really warm these past several days. I may have to convince myself that Global Warming is really not just an invention of some pinheads. LOL! Realistically though, it takes a lot more than this warm weather now for me to even consider than there is such a noun phrase as global warming. But anyway, I am not really into looking for a fight right now against the GW advocates. I just wanted to say that my daughter and I have been enjoying this warm fall weather. God must have remembered that a Filipino fella is in Minnesota. Honestly, I am not ready for the cold weather yet. But for the sake of the Minnesota Wild Rice and Chicken soup I guess I'm fine even if the temp drops to 10 today. We took some photos of ourselves outside the Olive Garden last Sunday to celebrate the warm November 2.

AL SHARPTON: Why are all the chickens white? We need some black chickens!

DR. PHIL: The problem we have here is that this chicken won't realize that he must first deal with the problem on this side of the road before it goes after the problem on the other side of the r oad. What we need to do is help him realize how stupid he's acting by not taking on his current problems before adding new problems.

OPRAH:
Well, I understand that the chicken is having problems, which is why he wants to cross this road so bad. So instead of having the chicken learn from his mistakes and take falls, which is a part of life, I'm going to give this chicken a car so that he can just drive across the road and not live his life like the rest of the chickens.

ANDERSON COOPER, CNN: We have reason to believe there is a chicken, but we have not yet been allowed to have access to the other side of the road.

NANCY GRACE: That chicken crossed the road because he's guilty! You can see it in his eyes and the way he walks.
